Hatch Green Chile Sauce

Whether new to cooking with chiles or a seasoned culinary pro, the following recipe for green chile sauce is a great way to embrace the flavor of chile.

The recipe was developed by Blue Clover Distillery and submitted to Pinal Ways from Food City/Bashas’ in celebration of its annual Hatch green chile season.

The sauce can be drizzled over fries, nachos or even pasta

Ingredients

1 bag autumn roast Hatch green chiles, drained

2 large white onions, diced

2 bay leaves

1 teaspoon cumin

1 tablespoon dried oregano

4 quarts regular stock

salt and pepper

cornstarch slurry

Instructions:

In a large saucepan, sweat the Hatch green chiles and onion until translucent. Toast spices in fat. Add stock and salt. Cook 10 minutes and thicken with cornstarch slurry.
