This inspection was conducted in response to a complaint regarding the dirty ice dispensers.

Ten (10) employees were present today. Cold holding units: deli prep cases and reach in retail coolers and walk in and freezers are holding at 41*F and below. Observed employee rinse their hands at the three compartment sink, wipe their face and immediately don gloves for food service. Employee was stopped and instructed to wash their hands. Manager provided training to employee on when to wash. Popcorn chicken being held in the hot holding deli display case for approximately 3 hours was 127-129*F. Manager voluntarily discarded chicken. Please maintain foods for hot holding at or above 135*F. Discard form was reviewed at time of inspection. Observed the following deli meats being held past the maximum discard date, in the deli cooler: Turkey 12/1, ham 12/1 and, chicken 11/30. Please monitor date marking daily. Manager discarded meat voluntarily. Discard form was reviewed at time of inspection.

Foods were properly dated. This inspection was conducted in response to a complaint regarding roaches (none were found) dirty beer taps (they were clean) and broken restrooms (they were functional). Glass cleaner was found stored with food. Keep cleaners stored separately. The cleaners were relocated. Repair the broken urinal. Clean the entire kitchen, including the floor from wall to wall. Sanitizer test papers were present. The dishwasher sanitizer level was zero. The refrigerators were 41 degrees or colder and the hot holding foods were 135 degrees or warmer. Foods were not properly dated. There was food equipment in the kitchen hand sink. The hand sink is not to be used for anything other than hand washing. The item was removed upon request. There was no measurable sanitizer in use at the mechanical dishwasher. Use the three compartment sink until the dishwasher is repaired. Egg rolls left on a kitchen counter were 58 degrees. Keep the egg rolls in the refrigerator. None of the foods in the walk-in refrigerator were date marked. They were dated upon request. The cleaver was being stored in a dirty crack between refrigerators. Keep the cleaver in a clean place. The can opener was dirty. Clean and sanitize the can opener daily. The kitchen is dirty. Clean all kitchen equipment, including all the high shelves.

A food handler was observed handling tacos with bare hands. There is no hot water supply. Replace the small defective water heater with a functional water heater that has at least 50 gallon capacity. Soap was not provided in the restroom. The food in the “hot” display case was not hot enough. Temps ranged from 112 to 130 degrees. See embargo report. The foods were voluntarily discarded by the person in charge and fresh food was prepared. There was a bag of rice sitting in a puddle of water in the back room under the leaking water heater. The rice was voluntarily discarded by the person in charge. There is no hot water supplied to any sink. Hot water of at least 110 degrees in sufficient capacity is required. Install a water heater of at least 50 gallon capacity. Repair the plumbing at the three compartment sink. Hot and cold water must be supplied to all three compartments.
